DYKON® Sodium Diacetate

WHAT IS DYKON®?

DYKON® is Federated Mills' trade name for sodium diacetate - a complex organic salt of acetic acid - the acid familiar in the form of vinegar. DYKON®, however, does not endanger the natural flavor of bread because the aldehydes and esters, the flavoring factors of vinegar - are not present in DYKON®.

DYKON® effectively inhibits the growth of both mold and rope in bread, buns and sweet goods; and mold in pies and cakes. The use of DYKON® as a mold and rope inhibitor is patented* and marketed exclusively by FEDERATED MILLS. DYKON® (Sodium Diacetate) is included in the Federal Bread Standards.

WHAT DYKON® DOES

DYKON® provides all types of baked goods with maximum possible protection against both mold and rope. This is accomplished with no effect on the natural flavor and aroma of the product.

HOW TO USE DYKON®

NO formula change is required in order to use DYKON®. The proportion of DYKON® should be varied from winter to summer. No acidifier of any type should be, or need be used with DYKON®. No special blending or preparation is required since DYKON® is instantly soluble - even more soluble than ordinary salt.

DYKON® (a white powder) may be stored indefinitely in its original container. It will not lump or deteriorate.

RECOMMENDED USAGE LEVEL

IN WHITE BREADS: and other yeast-raised white flour products, add 3~ to 6 oz. of DYKON® per hundred pounds of flour.
